Sturgeon — is the common name for approximately 26 species of fish, sturgeon family. To him include: Siberian, black, Japanese, American, Atlantic, Russian, Chinese, Amur, sturgeon and so on. The family includes some popular names, in particular, sterlet, Kaluga and Beluga. Sturgeon primarily cartilaginous fish, they have no vertebrae, and are partially covered with bony plates called shields. In cooking they are of great value because of the caviar, but the meat of this fish is very tasty. You can fry, boil, bake or smoke, this will fit any sturgeon. Recipe cooking stroganina (in Russia we say "stroganina") known since ancient times. It is not as simple as at first sight it may seem. One of the main conditions of preparation is the selection of quality fish after the catch it must be immediately deep-freeze, unfreeze, and then freeze it.

If you take the ready fillets, in 10 minutes you can cook the fish called sturgeon. Recipe for sturgeon with capers, olives in tomato sauce is well suited for the preparation of the second dishes. For 4 servings you will need:

  • 500 g sturgeon fillet cut into 2 parts;
  • 1 teaspoon minced garlic;
  • ½ Cup chopped onions;
  • 1 teaspoon chopped fresh rosemary;
  • ¼ Cup of the olives without brine and seed;
  • 3 tea spoons of capers;
  • ¼ Cup dry white wine;
  • ½ or up to ¾ Cup fresh tomato sauce;
  • 1 table spoon of olive oil.

Preheat the pan on medium heat (if on a hot pan, pour cold oil on the food when frying not stick), add the olive oil. When it heats up, spread a fillet of sturgeon into the pan. Sear to brown one side (about 2 minutes), then add the onion. Stir until it starts to become transparent. Add the garlic and rosemary. Stir fry 2 minutes until the garlic becomes brown color. Turn over the fillet. Add olives and stir, put the capers, too, mix and fry 2 minutes, then pour in white wine. Increase the heat and leave for a few minutes to reduce liquid. Reduce the heat to medium and add the tomato sauce. Stir to combine all ingredients and leave for a few minutes. Turn to the fillet on both sides was covered with sauce. The fish is ready, if it resists the pressure. Freshly ground pepper can be added during the cooking, but this dish should not be salted, as there is a lot of salt in the olives and capers. Served with rice, pasta or cous-cous. To garnish add a sprig of fresh rosemary.

For sauce:

  • 1 lime (juice);
  • 1 table spoon finely chopped coriander leaves.
