A Georgian dish satsivi quite mysterious. Some believe that this is the special sauce of walnuts, and others understand under this name a chicken dish. Anyway, actually this dish – and chicken or Turkey, prepared with an unusual peanut sauce, and the sauce with which it was made, which can be used in other dishes.
How to cook satsivi of chicken?
Georgian recipe offers to take a kilo of chicken meat, half a kilo of fresh walnuts, four hundred grams of onion, a couple cloves of garlic, a teaspoon of spices-coriander, Khmeli-suneli, half teaspoon saffron, cinnamon, cloves, two tablespoons of vinegar, salt. Bring to a boil chicken. This is best done in advance – present satsivi Georgian eaten with sauce and remaining broth. Half a chicken need to lay out on a baking sheet and send in the oven, from time to time pouring her juice, so she turned ruddy. Nuts peel and chop (as small as you can). Peel and slice the onions and garlic. You'll need about three liters of broth to a pound of nuts, as they absorb liquid not worse than regular flour. Saute the onion in the fat from the chicken in a deep frying pan. Chill the broth from the chicken and pour over walnuts. Add the garlic, pepper, salt, saffron and mix everything thoroughly until the consistency of liquid sour cream and cook together with onions a quarter of an hour. Imereti satsivi Georgian
Another recipe for this dish that is associated with this region of Georgia, as Imereti region. Take the carcass of chicken or Turkey, five to seven bulbs, a couple of eggs, about twenty cloves of garlic, a teaspoon of saffron, red pepper, coriander, Khmeli-suneli, four tablespoons vinegar, one pound of chopped walnuts, six sticks, cloves, and salt. Boil the meat and remove from broth. Add salt only chicken, the broth, don't add. Leave it overnight, then remove from the surface of the fat and place it in an enamel dish. Aluminum is not recommended. Mix in a bowl the nuts, peppers, garlic, cilantro, salt, and Khmeli-suneli, for stirring use a wooden spoon. Add to the mix two eggs, vinegar, gradually pour the broth. Let simmer about two minutes and serve chilled. Satsivi Georgian ready. The dish should thicken, but if you prefer a more liquid, use more broth. Dilute with water or add fresh herbs a traditional recipe advises.
