The name of the dish owes a Venetian painter of the Renaissance – Vittore Carpaccio (years of life and art - the XV-XVI century).

The thing is that the main color of his works was red. But this dish also consists mainly of red meat (for traditional recipe).

Recipe carpaccio chicken, rum and caper
